What did you make this week from our May VegCookbook, Veganomicon? I tried out a couple recipes this week.
Penne Vodka
Yummy, creamy and easy
Chickpea Patties with Mustard Sauce
Sooooo . . . the mustard sauce was awesome, and the flavor of the chickpea patties was good, but they were very, very chewy. Like, unable to cut them with a fork chewy.
This was my first time cooking with vital wheat gluten, which I’m guessing is what made them chewy. Do you have any tips for how to cook with wheat gluten? I feel like there are some technique tips I need to know.

I’ve owned Veganomicon for a long time, so I’ve already tried many things from it
Today I made the Tahini-Miso Dressing for a salad I was making with random veggie that I didn’t want to go bad.
It really is incredibly quick, easy and tasty.
Word to the wise: It also seems pretty virtuous, but miso is surprisingly high in calories, and tahini is as fatty as any other nut butter.

What are some of your favorite Veganomicon recipes?
Well, I can pop in quickly to say, without hesitation, that you really must try the MacDaddy mac & cheese recipe. I also like the Corn Edamame Salad (to which I add avocado to make it even awesomer!)
