Lemon Jam Biscuits

It was another crazy week when, sadly, the only home-cooked thing we had was spaghetti & Trader Joe’s meatless meatballs.

Boo hoo.

This week will be better!

I didn’t want to have *nothing* from our June VegCookbook, Everyday Happy Herbivore, to share with you, so early this morning I tried the Lemon Jam Biscuits recipe ’cause I had all of the ingredients on hand (flour, a lemon, baking soda, baking powder, salt, and applesauce). Plus, they were quick to make.

I wouldn’t eat them plain as they don’t have a lot of flavor, and are kinda tough, but they are tasty with jam. Something about the jam brings out their lemony flavor.

  1. I’ve tried a few of the recipes so far! I love the simplicity of these recipes! Truly does fill that healthy, but super simple niche in my cookbook rack and responds to your challenge last month of feeling too busy to cook! I wish I would’ve had this the last couple years of grad school! The curried quinoa salad was a great mix of ingredients, but the serving size left me (a bike commuter) hungry still. I also didn’t have yogurt around so tried it dry – recommend yogurt or dressing! Got home Sunday night late from a weekend trip and all I had in the fridge – literally – was a sweet potato, ginger, garlic (ok, and an expired wine box). I was able to whip together the sweet potato soup in no time flat. It was awesome! Last night tried out the Masala Burgers with the Masala Mayo recipe. That recipe is definitely a keeper! Challenged my assumption that veg burgers were complicated to make (and keep from falling apart). Last but not least, I made the Oatmeal Chews for energy bites. Made a great pre/post bike commute breakfast on a morning I couldn’t eat before I took off for work. My husband devoured the ones I left at home. Can you tell I’m having fun with this cookbook?
