This week, I made another smoothie from our July VegCookbook, Wild About Greens, the Spinach Pina Colada Smoothie. I liked the Green Velvet Smoothie I made last week, but I LOVED this smoothie. I’ve already made it twice.
If you don’t have the cookbook, here’s the Spinach Pina Colada Smoothie recipe on VegKitchen.
I also made the Pasta with Greens, Chickpeas and Olives, which was tasty and filling.

What did you VegCook this week?
Full disclosure: The link to Wild About Greens is attached to my Amazon Associates account. If you purchase something after clicking on the link, I get a small percentage of the sale, which I’ll probably use to buy more books!

I made pureed black bean soup, bokchoy with Tofu and a vegetarian panna cota with mango and pineapple ragout.
That sounds wonderful, Ritu! Can’t wait to see your blog.
OK, I got a Vitamix, so I am all over trying these smoothies!!
Made the Spinach Pina Colada Smoothie tonight. Awesome!
Yay for getting a Vitamix. I’m envious.
Isn’t that smoothie delish?
yes, totally.
Made something else from the book a couple of nights ago: Mediterranean Greens with Pine Nuts and Raisins (only I used dried cherries):

It sounds delish, Elisa. Did you take a photo of it?
On another note, how easy is it to clean the Vitamix?
I’m a terrible food blogger, I never remember to take pictures. Although I made vegan chocolate peanut butter balls yesterday and did remember on that (but no from this book).
And the Vitamix is SUPER easy to clean. And because it’s a plastic container, way less heavy and unwieldy than my Cuisinart Soupmaker Blender.
