The Quinoa with Chard and Chickpeas was warm, comforting and protein packed, but a little salty. You cook one cup of quinoa in two cups of water with two veggie bouillon cubes in it. If I make it again, I’ll use one cube. I used lacinto, or “dinosaur” kale instead of chard because it was on sale, and it’s my favorite leafy green (:
I’ve been loving all of the smoothie recipes in this cookbook. The one pictured above is the Spinach and Mango Smoothie. Even though the recipe suggested using a high speed mixer, like a Vitamix, I was able to use my regular blender. I just started out with chop and then moved on to mix, liquefy and puree.
