Last week was another busy one, so I only had a chance to try two recipes:
Coconut and Red Lentil Soup
Soooooooo delicious. Highly recommend. Be sure to use all of the suggested lemon zest and lemon juice. It really makes the dish. It was so thick, we ate it over rice. Yum.
Warm Kale and Quinoa Salad
I was a little disappointed with this recipe. It wasn’t that it was bad, just a little bland for my taste. That said, I added some soy sauce and nutritional yeast to it the next day for lunch, and enjoyed it (:

Today I made the Red Thai coconut soup. I thought it was absolutely fabulous. I uploaded photos to the group Flickr site. The recipe couldn’t be any easier, and the only thing I’d do differently next time is probably just purchase the coconut water, and not bother with the fresh coconuts. That was a little cumbersome for me. But this is a recipe I’ll repeat frequently! Debra

I made the Madeira Peppercorn Tempeh and LOVED it. It was the perfect dish for my un-vegan parents, who had never tried tempeh before and were surprised by how much they enjoyed it. This is NOT a quick weeknight dinner and I was happy to have the grandparents there to watch my kids while I cooked. Well worth the time – I will do it again!

Black Bean and Roasted Sweet Potato Burger with Green Chili Guacamole. Delish! Not a quick meal to fix either. Alot of prepping to do beforehand. Froze the extra burgers for future meals.
The photo of your burger looks sooooo good. My mouth is watering. I’m not kidding.
I made the coconut red lentil soup, and it was indeed awesome. I don’t think I use the whole coriander seeds the next time, though…they just were weird to me.

Another delicious-looking recipe that everyone seems to like. I’ll have to try to find to make it before the month is over.
Made a half recipe of the Curried Nada-Egg Salad. Used black salt instead of the salt. I was surprised how much it reminded me of egg salad!

How did I miss that recipe? I love “fake” egg salad Did you post a photo of it on your blog? I didn’t see it.
Unfortunately I haven’t posted it yet, but it was very good. I was surprised how raw tofu simulated egg! I have also made A.J.’s Power Smoothie twice. I found it a bit thin the first time, so I upped the fruit and decreased the liquid ratio. With mangoes and raspberries, it was delicious.
