Puttanesca Tofu Scramble

After Debra of Breathelighter made the Puttanesca Tofu Scramble from our March VegCookbook, Vegan Brunch, she shared in the comments that she, “totally devoured it.”

I made it tonight, and we devoured it too.  Yum! I’m already a big fan of puttanesca flavors (tomato, olives, capers), and tofu is such a good absorber of flavors, it’s a perfect combo. I didn’t include the full 1/2 teaspoon of recommended red pepper flakes ’cause I’m a spicy whimp, but it still had some kick after adding a few shakes from the red pepper flake bottle.

  1. i’m so glad you also enjoyed the Puttanesca Tofu Scramble as much as we did, Britt. I have made it twice since then. I did make another dish, but I can’t recall the name. I also took photos, so I’ll go ahead and add the info to this stream later from home if you’d like. I know we’re coming into the home stretch on this particular cook book! Debra

  2. I made the Curry Scrambled Tofu with Cabbage and Caraway and it’s another really wonderful dish. I paired it with red quinoa and it was outstanding. I posted a photo! Debra

  3. Mmm, that looks delish. I’ve made a few things, and plan to blog on it in the next few days. I made the lemon poppy seed muffins, and the rather easy roasted butternut squash and roasted potatoes. I could not believe I did not have rosemary to make the paprika-rosemary version that I planned on. I thought I had every herb/spice! So I made the basic version, which was quite good. The best roasted potatoes or fries I’ve ever done. I used the three color mix of young potatoes from Trader Joes…good stuff. I was so carbo loaded that I could not bear to make the pumpkin pancakes…so that is still to come. Happy Cooking!
