Curried Quinoa Salad + Sun-Dried Tomato Cream Sauce + Cinnamon Bun Smoothie

Yay! I *finally* had time yesterday to really dive into our June VegCookbook, Everyday Happy Herbivore.  I tried 3 new recipes:

The Curried Quinoa Salad was super delish and I’ll definitely make it again.  It was supposed to have cucumber in it, but my cucumber didn’t look so good when I peeled it, so I added an avocado instead (yum!).  I didn’t add the optional vegan yogurt, but I did add the optional celery which gave it an awesome crunch that contrasted nicely with the creamy quinoa, mango and avocado.  The quinoa is “curried” because you cook it with vegetable broth and curry. So good!

The Sun-Dried Tomato “Cream” Sauce tasted a little too nutritional yeasty for me when I took a taste from the pan, but blended into the pasta the nutritional yeast flavors faded and I tasted more of the garlic and sun-dried tomato.  The hubs gave it a thumbs up with the suggestion that it be served with more sun-dried tomatoes and some sauteed bell peppers.

Yum, yum, yum.  The Cinnamon Bun Smoothie is dessert in a glass. If you don’t like cinnamon, this isn’t the drink for you, but I loved the combo of banana, coconut milk (the kind you buy in a carton, not from a can), cinnamon, maple syrup, and vanilla. I’ll definitely make it again!

  1. i decided to make the white bean gravy & drop biscuits this week. i’m always on the lookout for a good biscuits and gravy recipe, so i had to give this a try. the biscuits were great and super easy to make. the gravy was pretty good, not great, but i did like the bit of kick it had from the cajun spices. my photo is on instagram under jomaryu. cheers!

  2. i made a second dish this week from everyday happy herbivore, sweet potato dal. loved it! don’t forget that salt at the end, it really pulls it all together. see pic on instagram: jomaryu
