Green Velvet Smoothie

My copy of Wild About Greens by Nava Atlas hasn’t arrived yet, so I made the Green Velvet Smoothie recipe that is available on VegKitchen.

I made mine with a blender, rather than a Vitamix, so it may have come out chunkier than intended, but it was still tasty.  I think it would have been even better if I’d used the suggested vanilla almond milk, rather than vanilla soy milk, and if the soy milk had been chilled.  I didn’t have agave nectar, or hemp seeds, so I used the honey and Trader Joe’s hemp protein powder we had on hand.

  1. I’m trying to make a smoothie or green juice every day per Kathy Freston’s The Lean. Sometimes I combine the ingredients from her two recipes to get them into one beverage. They are filling and healthy. I’m definitely going to try this one. I’ve been using the TJ’s hemp protein powder myself, but it makes everything such an unappetizing color 😦

    This weekend I made Coconut Cauliflower Curry with Mustard Greens and Spinach (page 186). It was divine. I confess I didn’t have curry powder on hand, so I used a little more turmeric than the recipe called for and added cumin and figured that was close enough 🙂 It did take quite a bit of time because there are several steps where you add ingredients then simmer for 10 minutes or more.

    But that’s OK, I spent the in-between time making the Un-Tuna Salad that I now make *every* weekend to bring for lunch at work from Blissful bites!

    What are you favorite things to put in your green smoothies? Are you able to make them in your blender, or do you use a Vitamix?

    The curry sounds delish. Can’t wait for my cookbook to arrive!

    That un-tuna salad was really one of the best recipes we’ve made all year, wasn’t it? I make the granola from Blissful Bites often too.

    • I’ve used collards, chard, kale. And I throw in a whole peeled lemon! I use coconut water as the base. I just use my blender, but I’m totally considering getting a Vitamix. Do you have one?
