Pancakes for Dinner, Chow Mein + Fettucine Alfredo from Chloe’s Kitchen

I had a delicious week of cooking from our October VegCookbook, Chloe’s Kitchen. Howabout you?

Today, I made Pancakes for Dinner for our Sunday lunch.  There are some good vegan pancake recipes out there, but they aren’t always as fluffy as I’d like them to be. These were yummy and fluffy.

Earlier in the week, I made Chinese Takeout Chow Mein which was soooo good. She really got the sauce right with a combination of soy sauce, hoisin sauce, veg broth, and chili-garlic sauce.

The recipe calls for either spaghetti, or “Asian noodles.” I used spaghetti, and it tasted great (I thought the spaghetti might give it a weird flavor). I only used 1 of the 2 suggested teaspoons of chili-garlic sauce ( I thought it might be too spicy), but I think we could handle 2 teaspoons next time. I also didn’t add bean sprouts, ’cause I don’t like them.

Finally, tonight I made Fettucine Alfredo for dinner, and it was delish. Similar to the Penne alla Vodka, pureed cashews make the sauce creamy.

When I made the Penne alla Vodka last week, I boiled the cashews for 10 minutes, and drained the water, as recommended.  But when I put all of the sauce ingredients in my blender, the cashews just ended up in a mushy mess in the bottom of the blender.

This time, when I made the Fettucine Alfredo, I didn’t soak the cashews, and blended the sauce in my food processor for a long, which worked much better than my blender, and made a yummy, creamy sauce.

  1. I made the Curried Lentil, Squash, and Apple Stew. Need many ways of using my wonderful butternut harvest we had this year. The stew was delicious. I actually roasted the butternut first. My husband loved it too. I will definitely make it again.

  2. This weekend I made four recipes. Check out the flickr page ’cause I’ll add my pictures as soon as I’m done this post!
    – Sea Salt Toffee Bars: AWESOME!! I took them over to a neighbours for dessert and they were all raving about them. Don’t be scared by the three step process. It actually takes very little time/work to prepare, it’s just that you need to let it sit and cool in between each step so the total time you need to be around is a couple of hours. And look at the ingredient list! SO SIMPLE! Just a few ingredients to make something so delicious.
    – Peanutty Perfection Noodles: This also turned out delicious. I had mine over vermicilli cause that’s what I happened to have on hand. It was creamy and really yummy. I added steamed brocolli too cause I like to have more veggies in my dinners.
    – Seitan Scallopini: I’m not familiar with “regular” scallopini so I don’t know what to say about this one! It was tasty but not my favourite recipe so far. I think I pictured the breading coming out more crispy. But the sauce was really good and I liked the mushrooms.
    – Maple Roasted Brussel Sprouts: DELICIOUS. I loved the sweet sauce on these. We found the recommended cooking time a bit too long though so wound up with some burnt bits but hey, I like those anyways! I’d say though do a test half way through to see how much longer your preference is for roasting.

    • Hi Barbi ~ Holy cow do your dishes look good. Especially the Sea Salt Toffee Bar (yum!). I’ll add them to the VCBC Pinterest Board as soon as I have a chance. I’m glad the Peanutty Perfection Noodles and Maple Roasted Brussel Sprouts turned out well. Those are two recipes I bookmarked to try.

  3. i made the penne alla vodka. i’ve been wanting to make this to compare with isa’s version which i love. have to say i like this version better cuz of the way the nuts were incorporated made it much creamier. i did just as she suggested… soaked the cashews overnite, blended with a cup of water for 2mins in a high speed blender (not a vitamix), and it turned out great! photo on instagram: jomaryu.

  4. New recipes on my blog~ Easy Peasy Pasta Salad and Garlicky Greens. Her recipes make so many servings I haven’t been cooking as much. And it freaks me out trying to figure out how to halve everything. At least my husband doesn’t mind eating leftovers!
