Stuffed Shells, Coconut Mashed Yams, Tuscan Bean and Green Soup, and More!

I made *lots* of yummy dishes during our last days of cooking from Chloe’s Kitchen, our October VegCookbook. My favorite dish was the Coconut Mashed Yams. I mean, how can you go wrong with yams, coconut milk, and maple syrup?

I also liked the Stuffed Shells with Arrabbiata Sauce, but the sauce was a bit too spicy for me. I would reduce the amount of red pepper flakes next time.

The Tuscan Bean and Greens Soup Over Garlic Toast was also delish (you can’t see the toast ’cause it’s under the soup).

I also made the Curried Lentil, Squash and Apple Stew, which was yummy, and  . . .

. . . the Simple Side Salad with Shallot Dijon Vinaigrette. The dressing was too strong for me. It called for one shallot, which I read as the whole shallot  “head.” Next time, I’ll use one shallot “clove.”

I really, really enjoyed cooking from Chloe’s Cookbook in October, and almost all of the recipes were super delish. What did you think of it?

  1. Those all sound good! I liked what I made as well, but I still have a ton more to cook from it. I liked that every recipe used pretty typical ingredients and seemed pretty simple/quick to make. It was the opposite of daunting.

    BTW: I too would interpret “one shallot” as being the whole shallot.

  2. I, too,really enjoyed Chloes Cookbook .I want to try the coconut mashed yams for the holidays. Do you think it would work with butternut, I have tons from the garden

  3. You made a lot of the things I had my eye on. Yum! I’m making the yams tomorrow, can’t wait. I LOVE her cookbook. The short list of ingredients are such a plus for me. I am so glad I have my own copy now.

  5. I’m loving your site! I’ve made a bunch of things from Chloe’s Kitchen, including the Pancakes For Dinner, the Best Ever Mac and Cheese, Hawaiian Sloppy Joe’s (website), and the Pineapple Not-So-Fried Rice. I organized a vegan cookbook potluck in Santa Monica, and people brought the Lemony Asparagus, the Harvest Roast Portabellos, Doughnuts, a Potato Casserole (not sure of its name, but it’s on the website), and the Chocolate Stout Cupcakes with Irish Whiskey Buttercream (website). Of everything I’ve tried, I must say that the cupcakes are to die for! I highly recommend that cupcake recipe, it was so light and rich! Of all the recipes, that is the biggest keeper I tried. I also really enjoyed the potato casserole, the sloppy joe’s, and the pineapple fried rice, but I may or may not make them again.
    I’ll be sure to join in on the recipe-making!

    • Welcome, Jessica! ~ Wow, you’re a VegCooking whirlwind. I’ve been eyeing that Chocolate Stout Cupcakes with Irish Whiskey Buttercream recipe for awhile. Do you happen to have any photos of the recipes you tried that we can see on Flickr, Twitter, Instagram, or your blog?

      • I do! If you look on Instagram, and search #chloecoscarelli, I have 2 photos up: one is of the 6 potluck recipes (asparagus, mushrooms, donuts, potatoes, cupcakes, and fried rice), and the second photo is of the sloppy joe (not a close up photo, but it looks nice with a side salad and glass of wine). I also have a photo of me and Chloe’s mom, who came to our potluck- so cool!!! Feel free to use my photos wherever if you want.

  6. Hi Jessica ~ I found them. Both look delicious. Were people supposed to bring items from Chloe’s cookbook/website, or could they cook from any VegCookbook?

    • It was just supposed to be from Chloe Coscarelli’s book/website. I was inspired by VegCookbook to do a cookbook club on my own, but I found it difficult to organize! Would rather just be a part of this community 🙂
