Two Yummy Tofu Scrambles for Vegan Brunch

Last week, I made two tofu scrambles from our March VegCookbook, Vegan Brunch by Isa Chandra Moskowitz.

I’ve had Vegan Brunch for awhile, and this recipe, along with the Perfect Pancakes recipes, are two of my favs. It’s super flavorful and easy to make. The only thing is, I can’t get the tofu to look like the photo in the book. My tofu always crumbles, rather than holds its shape in blocks, even though I’m using the extra-firm variety. I served it with Field Roast Italian “Sausage” and toast.

This was so so so so good.  The combination of the sweetness of the yams, with the nuttiness of the sesame seeds and sesame oil, with the spiciness of the ginger and red pepper flakes, and the saltiness of the soy sauce is genius.  You could eat it as is, or put it on noodles for dinner.  I will definitely make this again.

  1. Just listened to your great interview on one of my favorite podcasts, Tranquility du Jour! (It made me nostalgic for Crazy Sexy Kitchen.) The Sesame Scrambled Tofu and Greens with Yams looks like a winner Vegan Brunch recipe.

  2. I’ve always wanted to get Vegan Brunch. I love Isa’s blog and other books.
    As for scrambled tofu, I find it stays together better if you barely break it at first because it breaks down more as you cook. So, if you start with larger chunks it should work out better. Hopefully.

    I’ve been cooking black beans lately, so I think I’ll also try the indian burritos that Kelley did. 🙂

  3. I also tried the basic scramble recipe this week. It was good! Nothing that captured my attention to the point that I’d run back to it, but it certainly filled me up for the morning.

    Then I tried to make the cinnamon buns last night but totally failed out of my own fault. I definitely used dead yeast so they didn’t rise at all. No fault of the book though. I still ate some of the batter and even the un-risen cinnamon buns and the FLAVOUR was delicious!
