Butternut Bisque with Coconut Swirl + Cast-Iron Stir-Fry + Tofu-Mushroom Stroganoff

Since our last round-up, I made three more recipes from Isa Does It: The Butternut Bisque, which was good. We’ve been having it as a “starter” over the past few nights.

The Cast-Iron Stir-Fry which I *loved* (I made it in a wok). I’ll definitely make this again, but will probably top it with less basil and no avocado.

And the Tofu-Mushroom Strogonoff. The sauce for this recipe was phenomenal and I’ll definitely make it again. It had way too much tofu for my tastes, so I would cut that back next time. Yummy.

“Hide the Lentils” Tomato Sauce + Immune Me Juice

Last week, I dove back into two 2013 VegCoookbooks: Crazy, Sexy Kitchen by Kris Carr, and Eat, Drink and Be Vegan by Dreena Burton.

I didn’t have a juicer when we were cooking from  Crazy, Sexy Kitchen in January, so I was excited to go back in and try some of the juice recipes. I made the Immune Me Juice, which was very tart, but definitely felt like it was doing something.immune me juice

I also made the “Hide the Lentils” Tomato Sauce again from Eat, Drink and Be Vegan.

This time around, I pureed it with my immersion blender. I liked it, but should have followed my notes from when I made it in July: “When I make this again, I’ll add some olives and a sprinkle of red pepper flakes to give it some zing.”

For those of you who celebrated Thanksgiving last week, I hope you had a delicious and restful holiday weekend. The day after Thanksgiving seemed like the perfect day for me to make Carrot Cake Pancakes from our November VegCookbook, Isa Does It. They were tasty, but a little too spicy for me. I prefer the Puffy Pillow Pancakes, which were delish!

We’re already into the beginning of December and some of you have jumped right into our December theme: making new and favorite recipes from the VegCookbooks we’ve cooked from together in 2013. I’ve listed the recipes you’ve tried beneath each VegCookbook title.
